Today I am at an event called “2 Forks” which is based on the documentaries called “Forks Over Knives” and “Engine 2.” I watched those documentaries a few years ago, and they were very enlightening. Now that I have diabetes, I’m re-focusing on the healthy way of eating that they promote.
The event started this morning at 6:30am with some yoga. What a great way to get the day started.
Then it was breakfast time! I enjoyed steel cut oatmeal with berries, flax seeds, chia seeds, a touch of granola, and cinnamon. I also had a plate of kale with vinegar, and a small glass of sugar-free almond milk.
The event is in one large room at the Hilton Pasadena.
I’m excited about learning more and hearing my favorite doctors in person. Rip Esselstyn (creator of the Red Engine 2 diet and documentary) started the morning. His father, Dr. Caldwell B. Esselstyn (co-creator of Forks Over Knives). I’m soaking in the science behind eating a whole food, plant-based diet.

The last one regarding diabetes reversal is of the most interest to me. After that we’ll be enjoying a “plant-strong lunch.” Then there are 4 more presentations, and a Q&A session at the end. Guess who has a bunch of questions? Me! I’ll share more later after the event.
